Sweet Onion Mustard

This makes a great dip for anything or to add to your burger.  I miss French's Sweet Onion Mustard and remember my Grandmother always having a jar.  This is a very close replacement.

Sweet Onion Mustard

1/2 cup Miracle Whip

1 tablespoon yellow mustard

1 tablespoon minced onions

Mx together and store in container.  Wat at lest an hour before using to allow the minced onions to re-hydrate in the sauce.

Brussels Sprouts in Butter Sauce

I love Brussels Sprouts.  I always have a few packages in the freezer.  I love them so much that most of the time, I just eat them plain or maybe with a little apple cider vinegar.  But, every once in a while, I need to dress them up a bit for company.  This is a quick and easy sauce recipe really brings out their flavor.  You could also use this on broccoli or you favorite mixed veggies.

BRUSSELS SPROUTS IN BUTTER SAUCE
.
1 lb package frozen Brussels sprouts
1/4 cup butter plus 1 tablespoon
1 tablespoon fresh, chopped parsley
juice of one lemon
1/4 teaspoon salt
1/8 teaspoon black pepper
.
Boil the sprouts according to package directions.  Drain and toss with 1 tablespoon of butter.  In a saucepan, over medium heat, melt remaining butter in a pan with parsley, lemon juice, salt and pepper.  Mix well and bring to a boil while stirring constantly.  Add Brussels sprouts, toss and pour into your serving dish.

Simple Spaghetti Sauce

I love whole wheat pasta, but there is just something about plain, old-fashioned spaghetti that, well, satisfies the soul.  In the time that it takes you to make the salad and garlic bread, this sauce will be ready to serve.  The secret?  Start with a jar of sauce rather than straight from scratch.  I love Prego, but you can use your favorite sauce.
.
Simple Spaghetti Sauce
.
1 pound ground chuck
1 medium onion, chopped
1/2 teaspoon black pepper
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 teaspoon salt
1 teaspoon garlic powder
1 jar Prego, fresh mushroom
1/2 jar Prego, garden combination
1 can Hunts (14.5 oz) chopped tomatoes with green pepper, onion, & celery
1/2 pound fresh mushrooms, roasted (see recipe below)
1/2 cup water
.
Brown ground beef with onion, salt, pepper, and garlic powder and drain.  Add all other ingredients to saucepan and stir well to combine.  Heat over medium heat until bubbly.  Reduce to a simmer until ready to serve over your favorite pasta.
.
Roasted Mushrooms
.
1/2 pound mushrooms (any type)
enough olive oil to drizzle over mushrooms
salt
pepper
.
Pre-heat oven to 375 degrees.  Slice mushroom about a quarter of an inch thick and place in single layer on a baking sheet.  Drizzle with olive oil.  Sprinkle with salt and pepper.  Roast for about 15 to 20 minutes or until browned.

Oven Fried Chicken Tenders and Honey Mustard Sauce

I've never tried to make fried chicken tenders in the oven.  I've made the uncoated kind covered in spices and sauce.  But, I truly doubted a crispy chicken tender could come from the oven.  Then I saw Paula Deen make them on Dr. Oz!  If Paula can do it, so can I.  Of course, it all passed too quickly and I didn't write down the recipe.  So, I did a quick search on the web and found Oven-Fried Chicken Tenders at Betty Crocker.  I used the plain panko bread crumbs and added some Mrs. Dash.  They turned out yummy and crispy.  But, they definitely needed a dipping sauce.  Here's the quick and easy recipe for my Honey Mustard Sauce.

Honey Mustard Sauce

1/4 cup Dijon mustard
1/4 cup honey
1 tablespoon teriyaki sauce

Mix well and refrigerate until ready to serve.

Simple Steak Sauce

.
Steak sauce can be very expensive. Of course, one of my friends would say that a properly cooked steak needs no sauce. That may be true, but I like to use steak sauce on everything from burgers to fries. I came up with this recipe in desperation one night when I was completely out of any 'store-bought' sauce. You can use any type of grilling or steak seasoning, though I prefer Mrs. Dash because there is no added salt. If you prefer a bold sauce, add a few drops of Worcestershire sauce.

Simple Steak Sauce
.
1/2 cup ketchup
1 tablespoon Mrs. Dash Grilling Blend
1/2 teaspoon coarse ground pepper
1/2 teaspoon Worcestershire sauce
.
Mix all ingredients in a small bowl. Let sit for 15 minutes before serving to allow spices to absorb some of the liquid. Refrigerate any leftovers! It isn't necessary to add salt since there is plenty in the ketchup and Worcestershire sauce.

Mom's Thousand Island Dressing

1 tablespoon finely chopped celery
.
Mix Miracle Whip, chili sauce, pickle relish & salt. Add eggs, if desired, onion and celery. Store in air-tight container in refrigerator. Chill at least 2 hours before serving.

Southern Style Ribs in Mom's Barbecue Sauce

This sauce can be used for several different dishes in addition to Southern Style Ribs. I've also used it in Homemade Sloppy Joe's and for pulled pork sandwiches.

Here's a picture of the sauce before it is put on the ribs.

Cook your ribs first. Season with salt & pepper. Bake, covered, at 375 degrees for one and one-half hours. Drain grease. Cover ribs with sauce, cover dish with foil, and bake an additional hour at 375 degrees. Remove from oven and enjoy!
Mom's Barbecue Sauce
.
1/2 cup canola oil
1 medium onion, chopped
1 & 1/2 cup catsup
1 & 1/2 cup water
2/3 cup lemon juice
6 Tablespoons sugar
6 Tablespoons Worcestershire sauce
4 Tablespoons prepared mustard
2 teaspoons salt
1 teaspoon black pepper
.
Cook onions in oil over medium heat until tender, but not brown. Add remaining ingredients. Bring to a boil, reduce heat and simmer for 15 minutes. For Sloppy Joe's, omit oil, increase amount of onion and do not simmer. Just add sauce to your ground beef mixture.
