Pimiento Cheese Sandwiches

Most pimiento cheese sandwiches are just made with pimento, cheese and mayonnaise.  I like this recipe because it adds green peppers and onions.  Add your own favorite ingredients.  This recipe is very forgiving, so don't be afraid to experiment.  I recommending tasting it before adding the salt.  Then just add the amount you think it needs so that you don't over salt the dish.  Add bacon bits to make this a great dip!
.
Ever thought of making a grilled pimiento cheese sandwich?  YUMMY!  Just use the filling in place of cheese slices.
PIMIENTO CHEESE SANDWICHES
Place in a bowl
One-half cup of grated cheddar cheese, and then add
One tablespoon of grated onion,
Two tablespoons of finely minced green peppers,
One-half teaspoon of salt, (or desired amount)
One teaspoon of paprika,
One-half teaspoon of mustard,
Six tablespoons of mayonnaise
Mix thoroughly and refrigerate 2 hours before serving.  Spread on bread, toast, crackers.  Or, use as a dip.

*These little jars are so cute that I can't throw them away.  You can use them to store everything from screws to home-made hand scrubs.  They're also perfect for home-made candles.

HAND SCRUB - Mix 1/4 cup sugar with a tablespoon of olive oil and store in jar.  When ready to use, take a teaspoon out and scrub on your hands.  Rinse with warm water and pat dry.

Kitchen Mishaps

I've been fortunate in the kitchen and only had a couple of grease fires. Nothing serious enough for a fire department, but enough to spread a foul smell throughout the house and to consider carpet and furniture cleaning. But, the other day, I left a non-stick pan on the burner to heat up. The phone rang, and I thought I had turned it off. Instead, I left it on high. After the phone call, I didn't go back in the kitchen. It wasn't too long before I smelled the fumes. Thankfully, nothing caught on fire and the pan was not ruined. But, the smell in the house, oh my. I had to open all the windows and doors and the temp outside was well below freezing. It made me wish I had Fridge-It Naturally Activated Charcoal Odor Absorber on hand. Of course, the central heat kicked on as soon as I opened the windows which had me wondering about air duct cleaning process. Have you ever looked in your air conditioning ducts? Think of your dirtiest filter and multiply that by ten. Then add my kitchen fumes on top of it!
.
We have so many modern conveniences these days, but sometimes just expect them to work all the time with no human error. Leaving a burner on too long or burning something in the oven can really change the air quality in your house for days. Even those scented candles we love can leave candle soot damage. So, be careful and take care!

Is it really cheaper?

I'm all about saving money and taking short cuts. I also know it can be easy to make healthier versions of convenience items you find in the grocery store. However, I have to wonder about the following recipe. I haven't tried it, but wanted to get your thoughts on it. Considering the cost of ingredients and time involved, I think I'll stick with the easy route of buying it. I also know that I'd probably end up scorching the milk! But, if you decide to try this one, let me know how it turns out.

Sweetened Condensed Milk
.
3/4 cup sugar
1 and 1/4 cup powdered milk
1/2 cup water
.
Mix ingredients well and bring to a boil in a heavy sauce pan. Cook 15 to 20 minutes, stirring often, or until it reaches the desired thickness.

Simple Iced Date Cookies

Simple Cookery Date Oatmeal Cookies Iced
I hope you noticed my recent posts of recipes for Date Cookies and Oatmeal Raisin Cookies. These cookies taste great and are definitely different. However, they look very similar. While you can keep them separate during storage, it gets tricky when putting them on a serving platter.
.
I had a little leftover white chocolate almond bark and decided to experiment with it as an 'icing'. I melted the chocolate and dipped the bottom of the date cookies in it, just allowing it to cover the edges. Then I placed it on wax paper to cool. Not only were the results delicious, but the cookies were easily identified. This also works great to hide the bottom of the cookie if it gets a little overcooked!
