Mexican Baked Macaroni

This is a little casserole you can make with ingredients you probably have on hand in the pantry.  It's not too spicy, so you could add some cayenne pepper to kick up the heat if you want.

Mexican Baked Macaroni

2 cups elbow macaroni
1/4 cup olive oil
clove of garlic, minced
1/2 cup chipped dried beef
1 tablespoon flour
1/2 cup chopped mushrooms
2 tablespoons green chiles
2 tablespoons pimiento
2 cups diced tomatoes
salt to taste
1 cup grated Mexican cheese

Pre-heat oven to 375 degrees.  Cook and drain macaroni according to package directions.  Heat olive oil, add clove of garlic and chipped dried beef in skillet.  Cook until beef curls, add tablespoon flour, brown, add chopped mushrooms, green chiles, pimiento chopped fine,  tomatoes.  Cook all together, salt to taste, mix with macaroni, put in baking dish, cover with grated Mexican cheese (Queso Mexicano), bake at 375 degrees till cheese is melted.
