Brussels Sprouts in Butter Sauce


I love Brussels Sprouts.  I always have a few packages in the freezer.  I love them so much that most of the time, I just eat them plain or maybe with a little apple cider vinegar.  But, every once in a while, I need to dress them up a bit for company.  This is a quick and easy sauce recipe really brings out their flavor.  You could also use this on broccoli or you favorite mixed veggies.

BRUSSELS SPROUTS IN BUTTER SAUCE

1 lb package frozen Brussels sprouts
1/4 cup butter plus 1 tablespoon
1 tablespoon fresh, chopped parsley
juice of one lemon
1/4 teaspoon salt
1/8 teaspoon black pepper

Boil the sprouts according to package directions.  Drain and toss with 1 tablespoon of butter.  In a saucepan, over medium heat, melt remaining butter in a pan with parsley, lemon juice, salt and pepper.  Mix well and bring to a boil while stirring constantly.  Add Brussels sprouts, toss and pour into your serving dish.
