Lavish Bread Ham Wrap

Lavish Bread Ham Wrap

Have you tried Lavish Bread?  I love using it for a wrap.  I made this one with Ham, but you can use any lunch meat - works great with Turkey too.  It is all about the layering of flavors so feel free to use the seasonings of your choice.

The first layer is Philadelphia Jalapeno Cream Cheese   - spread over the flat bread.  Then add a couple slices of cheese - I used Baby Swiss.

Next add thinly sliced tomatoes and cucumbers.  You can also add sliced onions at this step.  I pre-seasoned these with salt & pepper after slicing.  Add any other seasonings you want.  I also patted them dry with a paper towel prior to adding them to the bread.  I also spread a little ranch dressing on it.

Now add baby spinach and lettuce of your choice.

Add the luncheon meat of your choice.  I used ham in this one - pat it dry before adding it.  Turkey works well or a combination of all your favorites meats.

Now roll it up - notice I left the very end without anything added - whenever I roll these, all the ingredients slide a little  - this helps keep it neat.  But, you may know a different trick!  Now it's ready to eat.  These do tend to get soggy if you leave them in the refrigerator so I would not recommend making them too far ahead.

Simple Baked Chicken and Rice

.
I love simple, especially when it tastes so good! After a week of being 'under the weather' I wanted something other than soup, but just as easy. This dish has 3 ingredients and no measuring. It doesn't get much easier. I used split chicken breasts, but you could substitute boneless chicken breasts or even chicken tenderloins.
.
Simple Baked Chicken and Rice
.
2 split chicken breasts
1 package Uncle Ben's Long Grain and Wild Rice, Fast Cook Recipe, 6.2-Ounce Box
1 can Low Sodium Chicken Broth, 14-Ounce
.
Pre-heat oven to 375 degrees. In shallow casserole dish, combine uncooked rice, chicken broth, and 1/2 of rice seasoning packet. Place chicken breasts (skin side up) on top of rice mixture. Sprinkle remaining seasoning on top of chicken. Cover with foil and bake for 1 hour at 375 degrees. Remove foil and place dish under broiler for 5-10 minutes to brown the skin.

So, I decided to see how far I could stretch this 'free' food. Leftovers combined to make this delicious casserole.

Scalloped Potatoes & Ham

This dish is an 'after' Easter tradition for my family. There was always leftover ham and potatoes that needed to be used up. You don't need to wait until Easter to make this, but it is a quick way to make a new dish with leftovers.

Stuffed Brats

This is a recipe I adapted from Mom's Stuffed Hot Dogs. It just doesn't get much easier than this!

Stuffed Brats

2 Beef Brats
2 sticks of cheese (I used a colby/cheddar swirl)
2 slices of deli ham
4 toothpicks

.
Put toothpicks in water to soak. Turn oven on broil. Slice brats length-wise, but not all the way through. Stuff brats with cheese. Wrap brats in ham slices using toothpicks to hold in place. Place on a cookie sheet or shallow pan. Broil for 10-15 minutes, or until cheese is bubbly. Do not eat the toothpicks. (Just making sure you're reading this!)

Holiday Potato Casserole

This easy breakfast casserole has become a Christmas Day tradition for me. I adapted this recipe from the traditional hash brown casserole. You can easily make it ahead of time. Just layer all the ingredients together, cover and keep in your freezer until ready to use. If you have never tried Jimmy Dean's Breakfast Skillets, they are wonderful. They contain ham, bacon or sausage with potatoes, red & green peppers and onions. They are located in freezer section of your grocery store and make a perfect recipe starter.

Holiday Potato Casserole

Jimmy Dean Breakfast Skillets-Sausage-1/2 pkg-about 2 cups
Jimmy Dean Breakfast Skillets-Ham-1/2 pkg - about 2 cups
1/2 cup Hormel bacon bits
1 cup shredded Cheddar Cheese
1 can Campbell's Cream of Chicken Soup
1/2 cup skim milk
1/2 cup low-fat sour cream
1/2 teaspoon black pepper
1/2 cup French's French Fried Onions

Pre-heat oven to 375. Coat inside of 9-inch square casserole dish with non-stick spray. Whisk together milk, soup, sour cream and black pepper. Layer Sausage mixture in casserole dish. Cover with 1/2 soup mixture. Sprinkle with 1/2 of bacon bits. Cover with 1/2 cheddar cheese. Layer Ham mixture on top of this. Cover with remaining soup mixture. Sprinkle with remaining bacon bits. Sprinkle with remaining cheese. Bake for 45 minutes or until bubbly. Top with French's onions and bake an additional 5 minutes or until onions are golden brown. Let set 10 minutes before serving.

If you decide to make this ahead of time or to freeze, don't add the onions to the top of your casserole. Also, put your frozen or cold casserole dish into a cold oven and increase your cooking time.
