Life Without Eggs?

I’ve been looking through a lot of vintage cookbooks lately.  My two favorite ones are pretty old and some recipes date back to the 1920’s.  These belonged to my great-grandmother.  Frugal cooking was a necessity she had a whole section of eggless cake recipes.  I thought you’d enjoy this one.

Black Cake

3 cups sifted plain flour

2 cups white sugar

6 tablespoons cocoa powder

2 tablespoons soda

1/4 teaspoon salt

2 cups buttermilk

1/2 cup melted butter

1 teaspoon vanilla

Pre-heat over to 375 degrees.  Sift together flour, sugar, cocoa, soda and salt.  Beat in milk and butter.  Stir in vanilla.  Pour into 9x13 cake pan and bake 30-40 minutes or until toothpick comes out clean.

A Cup of Sunshine

You’ve probably been wondering where I’ve been and what I’ve been doing with all my free time since I haven’t posted a recipe in a while.  I’ve been hit with multiple household repairs.  One of those repairs was replacing my refrigerator, so I was limited in being able to cook for a while.  But, I’m back!

I love this recipe.  It’s great for a potluck or a quick dessert.  You can change it up using your favorite fruit or flavored Jell-O. 

Sunshine Salad

1 small package Pistachio instant pudding mix

1 cup miniature marshmallows

1 cup pineapple tidbits with syrup

1 cup coconut

1 cup almond slices

1 tub cool whip (8 oz.)

Mix dry instant pudding with the cool whip.  Add remaining ingredients.  Chill at least 4 hours or overnight before serving.
